blog recipe #36 of 365

Good evening everyone 8)
Tonight's recipe was inspired buy the face that I didn't want to fight with my kids to eat....It was suppose to be salmon tacos, which I will blog about at some point 8) 
So I transformed my salmon into rice pilaf instead! what is great about pilaf, is that it can be what ever you want it to be!!! you can add any kind of veg (chopped or pureed) any kind of herbs and spices! and any kind of protein!  This is by far one of the most versatile dishes! Its quick, easy, tasty and can be a side dish or a main dish!
This recipe is dairy free and gluten free 8)

Salmon Rice Pilaf
Preptime:15mins  Cooktime: 25mins

2 Filets of salmon
1 cup brown rice
2 cups vegetable broth
1 roma tomato
½ red pepper
½ red onion
2 cloves garlic
1 lemon (juice)
1 Tbsp mint
2 tsp pepper

Preheat oven to 400  ͦ F
Place salmon on a parchment lined cookie sheet, Squeeze juice from half the lemon on the salmon.  Place in the oven to bake approx. 20 mins, or until flaky.
Meanwhile add rice and broth to a medium size pot, bring to a boil then cover with a lid and turn heat down to low-medium heat.  Simmer until rice is cooked and liquid is absorbed.
Meanwhile place the peppers, tomatoes, onion, and garlic in a food processor until pureed, add to the rice and let simmer with the rice. 
Once the salmon and rice is cooked, chop the salmon and add to the rice mixture, along with the lemon, mint and pepper.
If you like a little more texture, save alittle bit of veggies (chopped) to add to the dish.
