blog recipe #30 of 365

Hello everyone!!! Do you like sweet potato fries?? have you ever tried to make them your self at home but they always end up soggy or burnt??? ME TOO!!!! it enraged me (only a little, I don't generally get that mad) but regardless I was bound to fix this annoying problem!! AND I did!  I tried cooking them in a pan with coconut oil.........and Ill be damned! it worked!! You can totally change up the spices on these, I chose cinnamon, only because im a cinnamon junkie!! but rosemary, ground mustard, basil are all great too! so have fun experimenting!! stay tuned for tomorrow for my homemade tzatziki recipe to go with it 8)


Sweet Potato Fries
Preptime: 15mins  Cooktime:  20mins

1-2 Large sweet potatoes (depending on quantity needed)
1 Tbsp of coconut oil per potato
1 tsp cinnamon
½ tsp ground cloves
¼ tsp nutmeg
½ tsp marjoram

Heat a large fry pan on medium, add coconut oil.
Peel and cut the potatoes into desired size wedges or fry like strips ( I found that ½ ‘’ wide and ¼ ‘’ thick works the best).
Sprinkle cinnamon, cloves, and nutmeg on the potatoes, adjusting spice quantity if needed to have all fries covered.  Add the fries to the warmed pan, being careful not to overload the pan (may need to do in 2 separate batches).
Cook until brown and crispy on one side (approx.. 10 mins).  Turn them and cook on the other side until brown and crispy.
Remove from pan when there done to a plate lined with paper towel to absorb any oil.
Sprinkle with marjoram and serve with favorite dip!
Recommended dip – tzatziki
