blog recipe #32 of 365

Hello friends!!! hopefully we are all still friends after yesterdays post.......I know milk can be a touchy subject.  With that said, I am not perfect.....I still have dairy! In moderation of course....


Tonight's recipe is my healthy clean version of Rice Pudding 8) Whoever said that eating clean and healthy was boring, and that you couldn't have sweets.........They were very wrong!!!
I hope you enjoy!!! Its fantastic with fresh fruit on top 8)


To make it completely dairy free, use coconut yogurt! This recipe is also gluten free


Rice Pudding
Preptime:25 mins  Cooktime: 1hr

1 cup of Brown rice
3 cups of Coconut Milk
2 Tbsp Honey
2 tsp Cinnamon
½ tsp Nutmeg
4 Tbsp Greek Yogurt
2 Tbsp Raisins

Pre heat oven to 375  ͦF
Pour rice, 2 cups of milk, nutmeg, honey and cinnamon is a baking dish.  Mix it till blended.
Bake in oven for 1 hour, or until liquid is absorbed.
Cool in fridge for 20 mins.  Fold in extra milk, yogurt and raisins until blended.
Serve chilled.
