blog recipe #33 of 365

Good evening everyone 8) As promised tonight we have Almond butter muffins!!! clean eating style! NO guilt muffins!! They are also gluten free, dairy free, and paleo approved 8) 
They were really quick and easy to make!  If your not crazy about avocado, be assured you wont taste them! but if your still iffy replace the avocado with 1/4 cup of earth balance butter, the avocado or the butter help with the moisture! the avocado adds a few extra nutrients 8)

Almond Butter Muffins
Preptime: 10mins  Cooktime: 15-20mins

½ cup Almond flour
½ cup Coconut flour
½ cup Almond butter
1 Avocado (blended creamy)
2 Tbsp Honey
2 tsp Baking powder
2 Eggs (beaten)
1 cup Almond milk

Pre heat oven to 375  ͦ F
In a medium bowl mix flours, baking powder.  Cut in almond butter, honey and avocado with a pastry cutter, or use to knives.  When thoroughly mixed, texture will resemble coarse crumbs.
Add milk and eggs.  Stir lightly until batter is thoroughly mixed (batter will still be lumpy).
Spoon into paper lined muffin cups.
Bake for 15-20 mins until toothpick comes out clean.  Let cool.
Batter should be enough for 2 batches.
