blog recipe #8 of 365

Hi everyone!!! Tonite, I made avocado soup, with additional ingredients.  When I first made this, it turned out a little bland so I spiced it up a little with lime and cayenne.  That worked out much better!! Feel free to add in any other veggies you think my be awesome to amp the flavor!!

Avocado, Spinach, and Quinoa Soup
Prep time: 20mins   cook time: 35mins

4 cups of vegetable broth
1 cup of cooked quinoa
2 avocados pitted and peeled
2 cups of spinach
1 medium sweet onion sliced
1 fennel bulb, sliced
4 cloves of garlic
Juice of 1 lime
2 tsp of basil
1 tsp of marjoram
½ tsp cayenne pepper
2 tsp of peppercorns
1 tsp sea salt

In a large sauce pan, add the olive oil, onions and fennel.  Sauté for approx. 5 mins. 
Add the vegetable broth, garlic, lime and spices.  Let simmer for 15 mins.
Add the avocado, cooked quinoa and spinach.  Let simmer for another 15 mins.
Turn off heat and let cool for about 20 mins to let flavors set.  With a hand blender, blend until smooth and creamy.



This recipe is gluten free and dairy free!!!
