blog recipe #12 of 365

Hello everyone!!!
Tonites recipe is a 2 part recipe, however your going to have to wait for part 2 to come tomorrow 8)
Tonight by request from my sister in law, is my chocolate cake!!  This extremely healthy and moist chocolate cake, is very delicious. After reading the ingriedents list, you wont even believe me until you try it.
I found this recipe in a book I have, but of course I altered it to make it more healthy!! I use avocado instead of butter, as well as honey and stevia instead of sugar!!
Using avocado is a great alternative to butter, since it is very high in monounsaturated fats.  (The good fat that your brain requires).  Avocados are also great for weight loss, by allowing you to feel fuller longer, helps improve metabolism as well as balance sugar levels.  Its proven to protect against stoke and cardiovascular disease and nourish the skin!!  I try to eat at least 3-4 a week!! I hope the recipes this week will help you incorporate them into your diet in new fun ways 8)
Try to use the cameo brand of coco powder, it seems to taste the best!! and adding dark organic chocolate chips is a really awesome addition to the cake!!!


Avocado, Quinoa Chocolate Cake
Prep time: 10 mins  Cook time: 40 mins

1 Ripe avocado (pitted and flesh scooped)
2 cups of cooked quinoa
2/3 cup of almond milk (or coconut)
4 eggs
1 Tbsp honey
1 tsp vanilla
5 drops of stevia
1 cup of dark cocoa powder
1 tsp baking soda
2 Tbsp baking powder
2 Tbsp organic dark chocolate chips (optional)

Pre heat the oven to 375  ͦF
In a blender, add eggs, milk, vanilla, honey, stevia and avocado.  Blend until smooth
In a medium bowl, whisk cocoa powder, baking soda, and baking powder.  Add to blender and blend till mixed well.
Last add the cooked quinoa,  blend until smooth and thick. 
In an 8”x8” square cake pan or a 9” round cake pan, lightly spray olive oil to coat evenly.  Pour in mixture and place in oven.  Bake for approx.  40 mins.  Test by using a toothpick (poke center with a toothpick, if it comes out clean it’s finished).
Let sit for 15-20 mins to cool and set before cutting and serving.  Serve as is or with Avocado Chocolate Bailey’s Sauce.
