blog recipe #5 of 365

Hi everyone!! hope your all having a great day! So Im usually blogging my recipes at night after the kids are in bed, which seemed like a great relaxing time to do it.  However....I have been having crazy food dreams at night hahahaha so im thinking I may have to re-think my strategy....
But anyway 8)  tonight I made a rice dish! I love making one dish dishes! This dish is very similar to a stirfry, but indian-ish style.  Dont be to scared of the spice in this one, its quite complimentary!
This is a very quick easy meal, so don't let the ingredients list scare you!


Six spice rice                                            Prep time: 5 mins   Cook time: 20 mins
1 cup of wild or brown rice
2 1/3 cup vegetable broth
2 cloves of garlic (chopped)
2 Tbsp sweet onion
½ cup chopped broccoli
¼ cup chopped mushrooms
¼ cup chopped celery
2 Tbsp seedless raisins
2 Tbsp chopped blanched almonds
1Tbsp unsalted sunflower seeds
1 tsp coriander
1 tsp turmeric
½ tsp cloves
½ tsp cardamom
1 tsp curry
1 tsp pepper
In a medium pot, put in rice, broth, and spices.  Bring to a boil, then turn heat down to low/medium.  Let simmer until broth is absorbed and the rice is soft.
Meanwhile in a pan, sauté onion, garlic, broccoli, mushrooms, and celery with olive oil until soft.
Add to vegetable mixture.  Then add raisins, almonds, and sunflower seeds.  Mix well, and serve with favorite protein dish or on its own.


Unfortunately the picture doesnt display the awesome veggies, this is becuase the only way my kids will eat this, is if the veggies are pureed; which tricks them into thinking its veggie free hahaha.  This may be a great option for those of you with picky kids 8) I prefer it chuncky, and you may to.  Feel free to experiment with it!!
This is dairy free and gluten free!
