blog recipe #6 of 365

Good evening everyone 8) today I made Quesadillas my style 8) I love experimenting with new ways of incorporated veggies into my meals, so today I sauted the veggies before adding them to the quesadillas.  It turned out really well! Its a nice quick lunch, or supper if your in a rush!!
 
Caramelized Onion, Mushroom, and Spinach Quesadilla's
Prep time: 2-3mins  Cook time: 10-15mins

2 multigrain tortillas or brown rice tortillas
½ cup sliced sweet onion
1 cup sliced mushrooms
2 cups of spinach
6 thin slices of a tomato
1 cup of partly skimmed mozza (grated)

Heat olive oil, or earth balance butter in a medium pan.  Add onions, mushrooms and spinach.  Sauté until soft.
Heat a separate pan on medium, place the tortilla inside the pan flat.  On one side of the tortilla put half the cheese, 3 slices of tomato, and onion mixture.  Fold the tortilla in half and grill till lightly browned, flip and grill on the other side.
When finished, remove from pan and slice into three pizza shapes.
Repeat for second quesadilla.  Serve with your favorite healthy sauce.  Ie. Tzatziki

If you need to make more then 2, double quantities to make 4 and so on.
This meal can be dairy free buy supplementing for rice or soy.
It can be gluten free by supplementing for brown rice tortillas.
