blog recipe #48 of 365 Coconut crusted chicken

Hello finally!!! sorry about the week long break I had to take! my poor laptop had a run in with a full glass of water and ended up at the computer dr. lol But here we are, back at it 8) And hopefully I wont disappoint with my coconut chicken recipe!!  Going gluten free can be a difficult transition, especially when we have certain comfort foods we love like breaded chicken.  This is a fantastic healthy option! You can leave the chicken as a full breast or cut into strips to make chicken nuggets!  It has a sweeter taste to it, so the cayenne pepper adds alil punch, however feel free to leave out the spice if you cant tolerate the heat! 
This recipe is actually quick and simple to make and is gluten free, dairy free, and paleo approved 8)

Coconut Crusted Chicken
Preptime: 10mins Cooktime: 25mins

4 Chicken breast
3 Eggs
½ cup Coconut flour
1 cup Coconut flake
1 tsp Cayenne pepper
1 tsp Pepper

Preheat oven to 375  ͦ F
Place flour on a plate, and coconut on a separate plate.   In a medium bowl whisk eggs and spices.
Line a baking sheet with parchment paper, set aside.
One at a time dip the chicken in the flour to coat, then the egg to coat, then the coconut to coat.  Place the coated chicken the baking sheet.
Bake chicken in the oven for 25 mins or until fully cooked through.
